Mango Sorbet

Mango Sorbet

Serves 4

Ingredients
  • 3 ripe mangoes
  • 150g soft brown sugar
  • Zest and juice of 1 lime
Preparation
  • Peel the mangoes and cut the flesh off the stones.
  • Chop into small pieces.
  • Put the sugar and 185ml water in a saucepan and bring to the boil.
  • Reduce heat and simmer until the liquid is reduced by half.
  • Put the sugar syrup, mango and lime zest/juice into a blender and whiz until smooth.
  • Pour into an ice cream churn[1] and churn until set – transfer to plastic box and freeze until needed – remember to take out of freezer 30 mins before needed to soften.
Notes:
  1. If you don't have an ice cream churn then pour cooled syrup into a plastic container with a lid and put in freezer for 2 hrs, remove and whisk well before returning to freezer for a further 2 hours – repeat process then return to freezer until needed. Remove from freezer at least half an hour before serving.
