Peach & Feta Salad

This is a great salad for people that have to avoid tomatoes. The peaches add a lovely sweetness that is well balanced by the feta cheese. For a dairy-free option try Toffutti dairy-free cheeses from your health food shop.
Serves 4
Ingredients
- Bag of mixed leaves (I recommend Sainsbury's spring water washed salads)
- Handful mint leaves torn
- 4 peaches, each cut into 8
- 140g feta cheese (ewes and goats milk), cut into chunks
- Handful of pine nuts
- For dressing:-
- 2 tbspn olive oil
- 1 tspn runny honey
- Squeeze lemon juice
- Seasoning to taste
Preparation
- Mix all ingredients together in a large bowl.
- Add the dressing and serve.
