Spicy Baked Peaches

Spicy Baked Peaches

Serves 4

These make a great dinner party dessert and any leftovers are fantastic cold the next day. Put into a small plastic container and pack a spoon/fork!

Ingredients
  • 6 ripe peaches/nectarines, quartered and stoned
  • 150g caster sugar
  • 1 vanilla pod, split into two
  • 5 cardamon pods
  • Zest and juice of 1 lime
  • To Serve:-
  • Carton coconut cream, whipped to smooth texture and chilled OR Free-From ice-cream/cream
  • 50g whole shelled pistachios, chopped (optional)
Preparation
  • Preheat oven to 220C/ F/ Gas 8.
  • Tip sugar, vanilla pod, cardamom, lime zest and juice into a food processor and blitz (or mash together using a pestle and mortar).
  • Place fruit into a shallow ovenproof dish.
  • Add fruit and tip over sugar mixture.
  • Bake for 20 mins until fruit is soft but not collapsed.
  • Serve immediately with a dollop of coconut cream and a sprinkle of pistachio nuts (if using).
