Xmas Pud Truffles

Xmas Pud Truffles

Why not use leftover xmas pud to make these lovely truffles? (free-from options will obviously depend on your xmas pud...)

Makes 24

Ingredients
  • 100g df/gf/sof dark chocolate, chopped (we used Plamil)
  • 75g dairy free spread (I use Biona with palm fat – gives richer finish to baking)
  • 75g icing sugar, sifted
  • 200g free-from xmas pud, cooked and finely chopped
  • Icing sugar/ cocoa/ ground almonds for dusting
Preparation
  • Line a baking sheet with greaseproof paper.
  • Melt chocolate in a heatproof bowl over a pan of simmering water (or in the microwave on low setting).
  • In a separate bowl beat together the dairy free spread and sugar.
  • Add the melted chocolate and chopped xmas pud.
  • Place the bowl, covered, in the fridge for 1 hour.
  • Shape teaspoons of mixture into balls and roll in icing sugar/cocoa/ground almonds to coat.
  • Keep prepared truffles in an airtight container in the fridge until needed.
